Packaging Sausage
Coming from a big family has many rewards. Between seven kids, there is a wide diversity of talents. One of the talents, from one of the older brothers, comes in the form of being a superior smoked sausage-maker. He is a master of flavor and texture, he can transform 100 lbs. of elk meat into mouth-watering delicacies of breakfast sausage, summer sausage and pepperoni sticks.
This batch he made summer sausage (ready to eat sandwich meat when sliced thin), and breakfast sausage (makes for a wonderful complement when cooked and plated with eggs and toast).
It was my task to wrangle the long ropes of breakfast sausage into manageable sizes, package and freeze them before parsing them out to other family members.
I definitely got the easy end of this sausage-making venture and the packaged outcome will make for many easy and delicious meals throughout the summer for me and for the other kids.
