Little Livers

I do not care for canning, it is usually a long laborious process with constant monitoring needed. It also heats up the kitchen on days when closing the windows in the morning to keep things as cool as possible is happening.  I usually opt out of much, if any canning.

This year with the plums in high production, and unable to dehydrate and freeze them as fast as they are ripening, I am resorting to canning.

Long ago, before I realized what a treat canned prunes really were, I heard that when canned they looked like a jar of little livers. It kind of ruined it for me. That was all I could think about each time a jar was opened.

canned prunesNow that I am grown up (relatively speaking of course, I doubt if I will ever act like an adult), opening a jar during the dead of winter does indeed sound like a dream.

These jars were just pulled out of the counter and are still vibrant in their coloring. As they sit they will absorb the color from the skins and indeed look just like little livers in a jar. And to that I say, “bon appetite”.

    They do look good. On another subject, I saw another dwarf wooly bear caterpillar yesterday with lots of black on it. Further down the trail, I saw a regular sized one that still looked like it tended to more black. They both look kind of dehydrated though.
