Distribution Time
We had a real treat this week, one of my brother’s is the sausage maker in the family. He just finished a batch of elk breakfast sausage out of our harvest this year.
Once the sausage is in this smoked stage, it needs to be cut into pieces and sealed shut in freezer bags. By cutting the long lengths all approximately the same size, I can pack the bags close to the same ounce amount, so nobody can claim that they were shorted.
Bags and bags of meat filled my counter space until it the sausage all processed and ready for the freezer.
Now comes the distribution for all those who helped with the harvesting, butchering and cleaning up. It is a good reward for all the hard work, I just hope my brother got his share before sending the tubs for for processing.
Makes my mouth water.
