Beet Chips

A large bowl of thinly sliced beets.With the dehydrator full of carrot chips, I sliced up a bowl of beets to make chips from them next.

I have found a wonderful flavoring to add to the slices before drying them into chips. It is a product called True Orange Salt-Free Crystallized Orange Ginger manufactured and distributed by True Citrus Co. , a Baltimore company. The orange is a good pairing with the zip of the ginger. I tried this product on cod instead of lemon/garlic/pepper that is my normal seasoning for seafood and really liked the outcome.

With a bowlful of thin slices I simply coated the beets with about a tablespoon of the Orange Ginger crystals and tossed the slices around to coat them evenly. The natural moisture in the beets was enough for the crystals to adhere to the surface.

I let the beets sit for a couple of hours since I had the dehydrator busy with the carrots. Just before putting the beets in to dry, I sprinkled a little more of the crystals on just to make sure every chip had coverage.

The beets are a success even though they are not very pretty to look at. The beets turn very dark in the dehydrator and look like ripped up pieces of black paper but that is not going to deter me from having them available through the winter for healthy snacking.
