Rhubarb

A rhubarb plant ready for harvest.The rhubarb out in the garden is now ready for the next cutting, this will be the third harvest for this plant. Each harvest produces enough rhubarb to make a pake (a pie shell with a cake-type rhubarb filling) and a loaf or two of rhubarb quick bread.

Rhubarb Pake Recipe

Pie crust

Mix cut rhubarb with sugar to taste, teaspoon of vanilla, teaspoon of lemon or orange juice, 2 eggs, and 4 Tablespoons of white or yellow cake mix.

Turn mixture into bottom pie crust. Put on top crust or a make a crumble mixture for the crust.

The filling becomes custardy/cake-ish as the rhubarb cooks and releases its natural moisture.

As for the rhubarb quick bread, any quick bread recipe such as banana bread or zucchini bread will work just fine, but the amount of sweetener may need to be adjusted since rhubarb is a bit sour.
