All At Once

peaches in bucketsThe peaches that I so happily picked last week all started to get ripe at once. Now I am scrambling to get them all processed before they get bad spots and spoil.

I started off with fresh eating using grilled peaches on salads and deserts, and running a few through the dehydrator. Before long I was also cutting some into slices and spread on a cookie sheet that was placed in the freezer. Once frozen solid, the slices are slipped off the sheet and into quart size freezer bags. So far I have three quarts of frozen slices and two quarts of dried ones.

And I made four pies with one to eat now and three frozen for later use.

Another go-round of fresh eating, freezing, drying and pies will use up the rest of the peaches for this year just as I hear that the season is about at a conclusion.

    Yesterday was a peachy day for many, I’ll bet. I canned 18 pints yesterday and saved some for eating and cobbler. Yummy!
